Scallion-Cheddar Hash Brown Waffles

Ingredients

1 large egg

1 cup hash brown potatoes (thawed frozen shredded)

1/4 cup shredded reduced-fat cheddar cheese

2 medium scallions finely chopped

1 Tbsp fat free skim milk

1 pinch table salt

1 pinch black pepper

Directions

In a medium bowl, beat egg. Add potatoes, cheese, scallions, milk, salt, and pepper; stir to combine.

Spoon a scant 1/2 cup potato mixture onto a preheated mini waffle maker; cover maker and cook about 3 minutes until browned on both sides. Set aside and repeat with remaining ingredients.
